Asian noodle salad with peanut dressing

Ingredients
- 200g ribbon pasta
- 200g chicken or tofu
- 1 tbsp sesame oil
- 1 carrot & 1 cucumber
- 1 red pepper
- Fresh mint & coriander
- For the dressing:
- 4 tbsp Organic peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp lime juice
Preparation
- Noodles: Cook the pasta until al dente, drain and rinse with cold water.
- Fry: Cut chicken or tofu into strips and fry in sesame oil until golden brown.
- Vegetables: Cut all vegetables into thin strips (julienne) for extra crunch.
- Dressing: Stir all dressing ingredients until smooth (add 1 tbsp water if needed).
- Mix: Mix everything in a large bowl and garnish with herbs.
