Ingredients

  • 200g ribbon pasta
  • 200g chicken or tofu
  • 1 tbsp sesame oil
  • 1 carrot & 1 cucumber
  • 1 red pepper
  • Fresh mint & coriander
  • For the dressing:
  • 4 tbsp Organic peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice

Preparation

  1. Noodles: Cook the pasta until al dente, drain and rinse with cold water.
  2. Fry: Cut chicken or tofu into strips and fry in sesame oil until golden brown.
  3. Vegetables: Cut all vegetables into thin strips (julienne) for extra crunch.
  4. Dressing: Stir all dressing ingredients until smooth (add 1 tbsp water if needed).
  5. Mix: Mix everything in a large bowl and garnish with herbs.
