We serve this bowl at least once a week! Quickly prepared and packed with vegetables, it is the ideal lunch.

 

Ingredients

200g cooked rice noodles
2 spring onion
1 zucchini
2 carrots
100 g fresh spinach leaves
1 clove of garlic
3 tbsp neutral oil
2 tbsp chopped peanuts

Peanut lime dressing:

Juice of one lime
1 tsp grated lime zest
2 tbsp soy sauce
2 tbsp peanut butter
1 EL maple syrup
70 ml plant based milk
1 crushed garlic clove
Salt

Preparation

1. Cut the vegetables into fine strips and fry in oil. The vegetables should still be crisp.

2. Mix the cooked noodles and spinach leaves into the vegetables and fry for a further 2-3 minutes.

3. Mix the ingredients for the dressing well in a glass.

4. Arrange the vegetable noodles in a bowl, pour the dressing over them and garnish with chopped peanuts.

 

TIP: For the dressing you can simply shake all the ingredients together in an eaten peanut butter glass. So you can use every gram of our delicious peanut butter and nothing goes to waste.
