Peanut butter isn't just for breakfast. These satay noodles prove otherwise: a quick dinner that can be made in under 20 minutes with a bowl of rice noodles and a good peanut butter sauce.

Ingredients (2 serving)
Satay sauce
- 3 tbsp Organic creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar or lime juice
- 1 tsp honey or sugar
- 1 small clove of garlic, grated
- 3-4 tablespoons of water (for dilution)
- Optional: 1 tsp chili sauce or flakes
Pasta & Topping
- 200g rice noodles (or regular wheat noodles)
- ½ a cucumber, cut into thin strips
- 2 spring onions, sliced into rings
- 1 tbsp sesame seeds
- Hacked Organic peanuts
- Squeeze half a lime over it
Preparation
- Cook rice noodles according to package instructions (usually soak in boiling water for 3-5 minutes), drain and rinse with cold water.
- Stir all sauce ingredients together in a bowl until smooth. Thin with water to a pourable consistency.
- Mix the pasta with the sauce until everything is well covered.
- Fill into bowls and top with cucumber strips, spring onions, sesame seeds and chopped peanuts.
- Season with lime juice – done.
The sauce will keep for 3-4 days in the refrigerator. Simply make more and serve it with vegetables, tofu, or grilled meat.
