Peanut butter isn't just for breakfast. These satay noodles prove otherwise: a quick dinner that can be made in under 20 minutes with a bowl of rice noodles and a good peanut butter sauce.

Ingredients (2 serving)

Satay sauce

  • 3 tbsp Organic creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp honey or sugar
  • 1 small clove of garlic, grated
  • 3-4 tablespoons of water (for dilution)
  • Optional: 1 tsp chili sauce or flakes

Pasta & Topping

  • 200g rice noodles (or regular wheat noodles)
  • ½ a cucumber, cut into thin strips
  • 2 spring onions, sliced ​​into rings
  • 1 tbsp sesame seeds
  • Hacked Organic peanuts
  • Squeeze half a lime over it

Preparation

  1. Cook rice noodles according to package instructions (usually soak in boiling water for 3-5 minutes), drain and rinse with cold water.
  2. Stir all sauce ingredients together in a bowl until smooth. Thin with water to a pourable consistency.
  3. Mix the pasta with the sauce until everything is well covered.
  4. Fill into bowls and top with cucumber strips, spring onions, sesame seeds and chopped peanuts.
  5. Season with lime juice – done.

The sauce will keep for 3-4 days in the refrigerator. Simply make more and serve it with vegetables, tofu, or grilled meat.
