Peanut butter and soy sauce marinade for grilling in a ceramic bowl with meat and vegetable skewers

Ingredients

  • 4 tbsp Organic Peanut Butter (creamy, from neuland.bio)
  • 3 tbsp soy sauce
  • 2 tablespoons of lime juice (freshly squeezed)
  • 1 tbsp honey or maple syrup
  • 2 cloves of garlic, pressed
  • 1 tsp fresh ginger, finely grated
  • 1 teaspoon sesame oil
  • 1 tsp chili flakes (to taste)
  • 3-4 tablespoons of water (for dilution)

Preparation

  1. Mix the marinade: Mix all ingredients in a bowl until smooth. Thin with water to a pourable consistency.
  2. Marineren: Place chicken pieces, tofu cubes or vegetables (peppers, zucchini, mushrooms) in the marinade and let it marinate in the refrigerator for at least 1 hour, or preferably overnight.
  3. Spearing: Place marinated food on wooden skewers (soak for 30 minutes beforehand) or metal skewers.
  4. Grilling: Grill over medium heat for approximately 10-15 minutes, turning occasionally and brushing with the remaining marinade.
  5. Serve: Garnish with sesame seeds, fresh coriander, and lime wedges. Serve with jasmine rice or a fresh cucumber salad.

Tip:

The marinade also makes a great dipping sauce: simply stir in a little more water and serve with the grilled food. Leftovers will keep in the refrigerator for up to 5 days.
