What the apricot platschinke is to Austrian kids, the Fluffernutter is to American kids! But what is behind this delicacy, which is still relatively unknown to us?

The fluffernutter sandwich combines peanut butter and chocolate with airy, light, sweet vanilla marshmallow fluff.

Of course, here at Neuland we make our own marshmallow fluff. And this is how it works:

Ingredients

3 protein
100g sugar
20ml maple syrup
80ml water
1 package vanilla sugar (or real vanilla)
1 tsp cream stiffener

Preparation

Slowly boil down the sugar, maple syrup and water in a saucepan until the sugar has completely dissolved and the syrup is clear.

Meanwhile, in the food processor, beat the egg whites with the vanilla sugar and cream stiffener until stiff.

Slowly stir the hot syrup into the egg white mixture and continue beating for 3 minutes until you have a light, fluffy consistency.

Now you can assemble your fluffernutter sandwich. Nothing stands in the way of creativity. We love our Fluffernutter with peanut butter, banana slices, fluff and pan fry it with a tablespoon of butter. We always refine it with an extra portion of melted chocolate.

PS: in the video there is another layer of butter under the peanut butter. The author of this recipe hereby expressly distances herself from this step 😉
